Hi, Hungry Girl!

How do you feel about Splenda Brown Sugar Blend? I've noticed some of your recipes call for regular brown sugar. Do you notice a real difference in taste or is it just a preference? Thank you!

Sweet Tooth in Seattle (actually, in NYC, but Seattle sounds better)

Hi, Sweet Tooth!

This question gets asked A LOT. The truth is this: Splenda Brown Sugar Blend is merely a mix of granulated Splenda No Calorie Sweetener and regular brown sugar. Since many of you already buy boxes of Splenda for other recipes, calling for regular brown sugar and regular Splenda is a way to save you a little money. That's all -- nothing sneaky or weird -- just watching out for you. So rather than tell everyone to go out and buy Splenda Brown Sugar Blend (which I do personally love), HG recipes tend to call for a little brown sugar (cheaper) and a little Splenda (which you probably already have at home). And when HG recipes call for brown sugar only, it's because the calorie difference isn't significant enough to require both products. Maybe I should have made up something more interesting... P.S. Try these Nicely Iced Pumpkin-Bread Muffins!

Hungry Girl,

A while ago, there was a Hungry Girl recipe on the back of my Fiber One Caramel Delight cereal box -- it was for some sort of crazy ice cream ball. I cut out the recipe but I have since LOST it. Please, please, please tell me where I can find it!

iScream for Cereal

Hi iScream,

I know exactly which recipe you are talking about... and it's SOOOOOOOO good! It was developed exclusively for those Fiber One Caramel Delight cereal boxes, and it has never run in an email or HG cookbook. So, what am I going to do? I'm going to share it with you RIGHT NOW. Enjoy!

Freezy-Cool Crispy Caramel Scoop
PER SERVING (entire recipe, 1 scoop): 150 calories, 4g fat, 120mg sodium, 27g carbs, 2g fiber, 15g sugars, 3.5g protein -- PointsPlus™ value 4*

Ingredients:
1/2 cup light vanilla ice cream (like Dreyer's/Edy's Slow Churned Light)
1/4 cup Fiber One Caramel Delight cereal

Directions:
Place a scoop of ice cream on a sheet of plastic wrap, and wrap it up completely. Use your hands to form the plastic-wrapped ice cream into a smooth ball. Freeze for 15 to 30 minutes, until extra-firm.

Meanwhile, place cereal in a resealable bag and crush it through the bag with a rolling pin or a can of soup. (Progresso cans work great!) Transfer crushed cereal to a bowl and set aside.

Once firm, remove ice cream from the freezer and unwrap. Roll it in the crushed cereal until thoroughly coated. Mmmm!

MAKES 1 SERVING

P.S. That Caramel Delight cereal is FANTASTIC by itself as a sweet snack. It's also great mixed with other cereals (like puffed stuff and Fiber One Original) and topped with Unsweetened Vanilla Almond Breeze. Want more recipes that call for F1 Caramel Delight?
